Rajma Salad

 

INGREDIENT QUANTITY
Rajma (Kidney Beans) 150gms, soaked and boiled
Peanuts A fistful
Spring Onions (or Onions) 1 Tbsp finely chopped (or ¼ Cup)
Cucumber ¼ Cup, diced
Tomatoes ¼ Cup, diced
Salt As per taste
Black Pepper ¼ tsp
Vinegar 2 Tbsp
Chili Sauce (Bhut Jolokia) or Green Chilies As per taste or ¼ Tsp, finely chopped
Corriander For dressing
Olive Oil (optional) 2 Tsp

Note: Opt for organic ingredients, free from pesticides and Non-GMO.

Method-

  • Soak the Rajma overnight and then boil it with salt.
  • Roast the peanuts and once cooled down crush into tiny bits.
  • In a serving bowl add the crushed roasted peanuts along with olive oil, black pepper, salt and the vinegar. Add the chopped cucumber, tomatoes and spring onions or onions to the peanuts.
  • Now add the boiled rajma, chili sauce or chilies and then toss up the ingredients till mixed properly.
  • Sprinkle finely chopped coriander for dressing.
  • Serve and Enjoy!
