Peconut Almond Bombs

Peconuts

INGREDIENT QUANTITY GLYCEMIC INDEX LEVEL
Desiccated Coconut 1/3 Cup <35 Low
Peanut Butter 3 Tbsp. <20 Very Low
Your favourite natural sweetener (Stevia) 1 Tsp. or as per taste 0 Nil
Almonds 3 Tbsp., chopped <20 Very Low

Note: All ingredients used should be organic, free from pesticides and Non-GMO.

Method:

  1. To make coconut butter, keep grinding the dry desiccated coconut till it reaches a fine paste consistency.
  2. Now mix all of the above ingredients in a bowl till it is well blended. Adjust the sweetness as per preference.
  3. Place into silicon moulds to form a shape and decorate it with chopped almonds or push whole almonds half way into the middle of the mixture. Let it set in the fridge for a few hours.
  4. Garnish with freshly grate coconut and enjoy!
