Paleo Almond Biscotti

Almond Flour ½ Cup <20 Very Low
Chopped Almonds ¼ Cup <20 Very Low
73% Dark Chocolate Chips 1 Tsp <50 Low
Cacao Powder 1 Tsp <20 Very Low
Honey ½ Tsp <50 Low

Note: All ingredients used should be organic, free from pesticides and Non-GMO.


  • In a large mixing bowl, mix in all the ingredients, cover the dough, and chill for about 10 minutes.
  • Preheat oven to 375 degrees F (190 degrees C). Divide the dough into two parts, and roll each part into a log. Place logs on lightly greased cookie sheet, about 4 inches apart. Flatten slightly.
  • Bake for 20 to 25 minutes, or until toothpick inserted in centre comes out clean. Cool on cookie sheet for 5 minutes, then carefully transfer to a wire rack to cool for one hour.
  • Cut each loaf into 1/2 inch wide diagonal slices. Place slices on an ungreased cookie sheet, and bake at 325 degrees F (165 degrees C) for 9 minutes. Turn over, and bake for 7 to 9 minutes. Cool completely, then store in an airtight container.

Almond flour is such an easy, delicious and moist ingredient to work with- you should always swap your white flours for this one. The dark chocolate is scientifically proven to improve your body’s responsiveness to insulin and instead of honey you can use chopped dates however the latter has a high GI – so use in moderation.
