Nutty Cucumber & Egg Salad with Lemon Dressing

Salad Mix
Cucumbers 2 in number, sliced or diced <20 Very Low

Egg 1 in number, hard boiled; sliced or diced 0 Nil

Fresh Mint Leaves ½ Cup <10 Negligible
Cherry Tomatoes (optional) As desired <20 Very Low
Chia Seeds or Mixed Seeds 1 Tbsp <20 Very Low
Salad Dressing
Green Chilies 1 in number, chopped <20 Very Low
Virgin Olive Oil (non-refined, not Pomace) 3- 4 Tsp. 0 Nil
Ginger 1/2 inch, finely chopped <10 Negligible
Lemon Zest ½ Tsp. <10 Negligible
Lemon Juice 2 in number <10 Negligible
Stevia Powder 1 Tsp. 0 Nil
Pepper Powder To taste 0 Nil
Salt To taste 0 Nil

Note: All ingredients used should be organic, free from pesticides and Non-GMO.

Method:

  • Mix all the ingredients listed under salad dressing in a bowl thoroughly. Keep aside some mint leaves for garnishing.
  • Mix all the salad veggies together except the egg.
  • Shake well and add the dressing over the salad.
  • Now garnish with the boiled and sliced egg pieces and the remaining mint leaves.

Tip:- Try and chill all the salad veggies before pouring the dressing over it. Even eggs taste yummier when cooled before added to the salad.
