INGREDIENT QUANTITY GLYCEMIC INDEX LEVEL
Mushrooms 200g washed and halved <10 Negligible
Masala Mix
Kashmiri Chili Powder 2 Tsp <20 Very Low
Coriander Powder 3 Tsp <10 Negligible
Turmeric Powder 1 Tsp <10 Negligible
Salt pink and regular (1:1) 2 Tsp 0 Nil
Seasoning
Coconut oil (any non filtered) 2 Tsp 0 Nil
Curry Leaves A Handful <10 Negligible
Whole Musturd 1 Tsp <10 Negligible
Cumin 1 Tsp <10 Negligible

  • Heat the oil in a pan and add the mustard seeds. Allow spluttering.
  • Add in the cumin and curry leaves and mix well. Now add the halved mushrooms and cook for a few mintues.
  • When the mushrooms are cooked, add a pinch of salt to release the water.
  • Now add the masala mix and cook thoroughly till masalas are incorporated well.
  • Serve with a dash of lime and sprigs of chopped coriander.
  • Accompany with a salad and some curds. Bon appetite!
