Lemony Mushrooms with Cheese Sauce

Green Chilies 1 in number, slit <20 Very Low
Lemon 1 in number, juiced 0 Nil
Garlic 2 cloves, chopped <10 Negligible
Butter 2 Tsp. 0 Nil
Olive Oil / Coconut Oil 1 Tsp. 0 Nil
Salt To Taste 0 Nil
Pepper Powder ½ Tsp. 0 Nil
Coriander 1 sprig <10 Negligible
Cheese Sauce
Fresh Cheese of your choice 2 Slices or grated 0 Nil
Fresh Cream or Coconut Cream 4-5 Tbsp. 0 Nil
Whole Milk or Coconut Milk 2 Tbsp. 0 Nil
Paprika Powder 1 Tsp. <20 Very Low

Note: All ingredients used should be organic, free from pesticides and Non-GMO.

Method:

  • Heat oil in a pan and then add the butter. When it melts, add diced onions to it.
  • Sauté, add garlic, green chillies and stir.
  • Add in the diced mushrooms and salt to it let it sweat and release water.
  • Add half the lime juice, continue cooking on a high flame till the water evaporates and a few mushrooms get caramelized on the edges.
  • Add the remaining lime juice and plate it with a spring of coriander on it.
  • For the Cheese Sauce – heat cream and cheese on low flame till it melts. Add the paprika. Add milk or cream to make the sauce thinner. Serve warm.
  • Lemony Mushrooms ready to serve! Enjoy with a drizzle of cheese sauce over it.
