Homemade Pumpkin Seeds Three Ways

Turmeric Spiced Pumpkin Seeds

Salted Caramel Pumpkin Seeds
Pumpkin Seeds (raw) 135g <20 Very Low
Coconut Sugar 1 Tbsp. 35 Very Low
Cinnamon 1/8 Tsp. ground <20 Very Low
Ginger 1/8 Tsp. ground <20 Very Low
Nutmeg A pinch <20 Very Low
Butter ½ Tbsp. 0 Nil
Coconut Sugar 1 Tbsp. 35 Very Low
Salt ¼ Tsp. 0 Nil
Cocoa Dusted Pumpkin Seeds
Pumpkin Seeds (raw) 100g <20 Very Low
Unsweetened Cocoa Powder ¾ Tbsp. <20 Very Low
Honey (Raw) 1 Tbsp. <65 Moderate
Vanilla Extract ¼ Tsp. <20 Very Low
Salt A pinch 0 Nil
Water 1 Tbsp. 0 Nil

Note: All ingredients used should be organic, free from pesticides and Non-GMO.

Method:

1. For Turmeric Spiced Seeds –

  • Rinse pumpkin seeds and spread evenly to allow drying for 30 min or pat dry with a clean paper towel if desired.
  • In a small bowl add the turmeric, salt and water and mix thoroughly.
  • Pour over the dry raw pumpkin seeds and mix till combined properly.
  • Let it stay for a few minutes till the seeds get dry.
  • Place on a pan and dry roast till the seeds change colour and give a pleasant aroma.
  • Serve and Enjoy!

2.For Salted Caramel Seeds –

  • Rinse pumpkin seeds and spread evenly to allow drying for 30 min or pat dry with a clean paper towel if desired.
  • Preheat oven to 150 degrees Celsius (You can dry roast it in a pan too).
  • In a bowl, mix the 1 Tbsp. coconut sugar, cinnamon, ginger and nutmeg. Add the seeds to it and combine evenly.
  • Then spread the seeds on the baking sheet and bake seeds until lightly golden for about 20 minutes.
  • In a pan melt the butter on low heat and add the remaining coconut sugar and salt. Cook for a few minutes till bubbly and thick and immediately add the roasted seeds.
  • Coat the seeds thoroughly and let it cook for a minute.
  • Cool before serving. Enjoy!

3.For Cocoa Dusted Seeds

  • Rinse pumpkin seeds and spread evenly to allow drying for 30 min or pat dry with a clean paper towel if desired.
  • Place on a pan and dry roast till the seeds change colour and give a pleasant aroma. Keep stirring occasionally.
  • Preheat the oven to 150 degrees Celsius.
  • Mix together the water, cocoa, honey, vanilla and salt. Stir just until all the ingredients have combined and mixture is smooth. Remove from heat.
  • After the seeds have roasted add into the mixture above and coat it evenly.
  • Spread the seeds out on baking sheet and bake for 10 to 15 minutes, until almost dried out (You can dry roast on the pan again if desired).
  • Seeds will dry out as it cools.
  • Serve and Enjoy!
