Four-Ingredient No-Bake Cheesecake

Greek Yoghurt (Full fat) 100g 0 Nil
Fresh Thyme Leaves 1 Tsp. <10 Negligible
Almonds 8-9 in number, sliced <20 Very Low
Stevia ½ Tsp. or as per taste 0 Nil

Note: All ingredients used should be organic, free from pesticides and Non-GMO.


  • First prepare the hung curds. Tie the yoghurt in a muslin cloth and leave it hanging over a container for a few hours or till all the water drains out. For a quick solution, apply pressure to the bundle and squeeze out all the water till all the extra liquid has drained out and just a thick mass of curd remains. It should be hung till it resembles a cream cheese consistency.
  • Line a mould or a muffin mould with sliced and roasted almonds (Note: the almonds could be the crust or the topping whichever way preferred).
  • In a container mix together, stevia, hung yogurt, and thyme. Pour the yogurt mixture over the almonds and let it chill in the refrigerator.
  • Once chilled loosen the edges with a knife and unmold it on to a plate.
  • Enjoy!
