Easy Creamy Avocado Mousse

INGREDIENT QUANTITY GLYCEMIC INDEX LEVEL
Avocado Pulp 1 cup, chilled <20 Very Low
Hung Curds 100gms, chilled 0 Nil
Stevia or any other natural sweetener 1 ½ tsp. or to taste 0 Nil
Almonds 8-10 pieces <20 Very Low
Fresh Cream 30g, chilled 0 Nil

Method

  1. Prepare hung curds and avocado pulp and place in refrigerator till chilled.
  2. Coarsely ground the almonds.
  3. Mix the chilled avocado pulp, hung curds and natural sweetener. Beat in a blender till smooth.
  4. Put the mixture in a bowl and add the fresh cream and whisk till light and fluffy. Add in the almonds and serve chilled!
