Cucumber Chia Yoghurt Custard

INGREDIENT QUANTITY GLYCEMIC INDEX LEVEL
Cucumber 1 in number, large, grated <10 Negligible
Greek Yoghurt 100gms 0 Nil
Stevia or any other natural sweetener 1 ½ tsp. or to taste 0 Nil
Chilled Water ½ Cup or lesser 0 Nil
Chia Seeds 3-5gms
Salt A pinch 0 Nil

Note: All ingredients used should be organic, free from pesticides and Non-GMO.

Method:

  • Blend the greek yogurt with the sweetener, salt, and a little water.
  • Add chia seeds to the mixture and stir. Let it sit in the fridge for a while to cool & for the chia seeds to fluff up.
  • Once cooled add grated cucumber, stir and spoon it in your dessert jars, mugs, bowls or ramekins.
  • Serve Chilled.
  • Tip: – Add 5-6 sliced almonds plain or roasted as well as some fresh berries, if desired, Enjoy!
