INGREDIENT QUANTITY GLYCEMIC INDEX LEVEL
Cabbage 200g, shredded finely <10 Negligible
Desiccated Coconut 3 Tbsp. <35 Low
Peanuts 2-3 Tbsp. <20 Very Low
Curry Leaves 4-6 leaves <10 Negligible
Mustard and Cumin 1 Tsp. each <35 Vey Low
Turmeric Powder 1 Tsp. <10 Negligible
Green Chili 1 in number, slitted <20 Very Low
Coconut Oil 1 Tbsp. 0 Nil
Salt (Pink and Regular) 1:1 ratio as per taste 0 Nil
Coriander Leaves For garnishing <10 Negligible

Note: All ingredients used should be organic, free from pesticides and Non-GMO.

Method:

  • Heat the oil and fry the peanuts till golden on low heat. Remove the peanuts from the pan and keep aside.
  • In the same oil, add cumin, mustard, chilies and curry leaves. Allow spluttering for a bit. Add turmeric and stir.
  • Now add in salt & the cabbage and mix it well. Cover for not more than a minute. Don’t cook the cabbage too soft, let it b crunchy.
  • Add desiccated coconut and a dash of lime juice if you desire.
  • Garnish with coriander leaves and serve hot!
